If you follow my blog, you may have noticed I don’t post too many desserts. Trust me when I say, it is not because I don’t love sweets. It is the exact opposite. I grew up in a house where there were rarely sweets, but if they were there you ate them until they were gone! At the top of my list of favorite desserts is Pecan Pie.

I seriously have the best/worst taste in food sometimes. I think that it is one of the most unhealthy desserts, filled with corn syrup and sugar! I figured if I could Paleo-ify this dessert I could do anything! These Pecan Pie Bars are great for a few reasons. One is that they have natural and healthy ingredients!

The second is that since they are cut into small squares you can have a bite instead of a giant slice of pie. Lastly, they are so easy to share this way. If you are anything like me, you will want to bring these to a gathering to share with friends (rather than devour them on your own at home!) So try out this Paleo recipe for your next party or event!

Pecan Pie Bars
Crust
1 ¾ cup blanched almond flour
1 egg
1 tablespoon coconut oil
½ teaspoon arrowroot powder
¼ teaspoon sea salt

Filling
8 ounces pitted dates
2 eggs
¼ cup maple syrup
½ teaspoon vanilla
1 cup pecans, chopped

1. Preheat the oven to 350 degrees. Add the almond flour, egg, coconut oil, arrowroot powder, and sea salt to a food processor. Pulse it until the dough forms a ball. Press the dough into a 12-inch glass casserole dish. Bake for 15 minutes.

2. Add the dates to the food processor and blend on high for 1 minute. Add the eggs, maple syrup, and vanilla. Process on high until the filling is smooth. Pour the filling mixture over the partially cooked crust. Evenly sprinkle the pecans over the top. Bake for another 30 minutes. Allow the bars to cool before cutting.
